Mug Cake for One
This week brings Valentine's Day, and this is a day that people have big feelings around--they love it, they hate it, they hate that they love it, it's a whole thing.
Valentine's Day is a wonderful opportunity to do something sweet (ha!) for yourself, regardless of who else is around to otherwise celebrate or commemorate you.
Taking care of yourself helps you not depend entirely on others for any care, causing hurt and resentment when they don't, won't, or can't. Doing things for yourself that feel good will help all your relationships, and allow the things that others do for you to be cherries atop your already sweet sundae rather than your only ride to the ice cream parlor.
This is why I spent all of January perfecting this mug cake recipe. It's the perfect way to treat yourself in a way that's sweet, warm, and easy to clean up.
My chocolate mug cake is super kid-friendly (both in the making and in the eating) and can be so easily made Gluten Free, Dairy Free, or Vegan by swapping out some of the ingredients that you likely have on hand anyway!

Chocolate Mug Cake Recipe
- Flour (3 tbsp)
- Baking cocoa (2 tbsp)
- Light Brown Sugar (3 tbsp)
- Baking powder (Œ tsp)
- Milk (3 tbsp)
- Butter (1 tbsp, melted)
- Duke's Mayonnaise (1.5 tbsp)
- Milk or semi-sweet chocolate (1 oz)
âđ»Instructions:
- In a microwave-safe mug, whisk flour, cocoa, brown sugar, and baking powder.
- Add milk, melted butter, and egg yolk (if using, see notes). Stir just to combine.
- Push the chocolate into the center of the batter.
- Microwave for 53 seconds. Serve warm
đ Notes:
- Do not overmix. This is the biggest thing. You will dry it out otherwise.
- Add richness and protein with a large or jumbo egg yolk; it's not required but it is delicious.
- This recipe calls for All-Purpose flour. If you use Self-Rising flour, eliminate the baking powder.
- I use squares of baking chocolate so they are easy to shove down into the center. If youâre using chopped chocolate or chips or whatever, you may need to make a divot in the batter with the back of a wet spoon.
- I will not take any responsibility for the outcome of this recipe should you choose to use a mayonnaise other than Duke's.
